Procedure

  1. In the main kettle weigh ingredients from Phase A. Mix until no lumps are visible and a homogeneous gel is formed.
  2. Add ingredients from Phase B and mix until everything is fully incorporated.
  3. In a side kettle weigh and heat to 70 C ingredients from Phase C. Mix until it is homogeneous. Let it cool to room temperature
  4. Add Phase B into the main kettle and mix until the emulsion is fully formed.
  5. Adjust the pH to 5.0-5.5 with Citric Acid.
